HIGH PROTEIN Fettuccine with Kale, Caramelized Onions and Goat Cheese

There is a note on my phone called “recipes to try”. Every time I come across a recipe online or on Instagram that looks tasty and uncomplicated, I add it to the list and think, “I’ll make this next week!” Needless to say, the list is ridiculously long.

So here we are, almost a year after I first spotted this recipe for Fettuccine with Kale, Caramelized Onions and Goat Cheese on the Cup of Jo blog, and I have just made it for the first time. I used our GK skinnypasta HIGH PROTEIN Fettuccine for the added protein boost (thanks, pea protein), not to mention fewer carbs and calories, and the result was Delicious with a capital D. The goat cheese made everything creamy, the heaps of kale provided that “I don’t feel so bad about eating all this goat cheese” flavor, and the caramelized onions added a lovely sweetness.
